Instructions
Preheat oven to 375°F (190°C) and grease a 9x13 inch baking dish.
Heat a large skillet with avocado oil. Brown the meat for 8–10 minutes and drain fat.
Add taco seasoning and water. Simmer 3–5 minutes until thickened.
Add diced onion and bell peppers. Sauté 2–3 minutes.
In another skillet, sauté cauliflower rice for 5 minutes to reduce moisture.
In a bowl, mix cream cheese, cottage cheese, and half of the cheddar cheese until smooth.
Layer cauliflower rice in the baking dish, then meat mixture, then creamy cheese mix. Top with remaining cheddar.
Bake uncovered for 20–25 minutes until bubbly and golden.
Let rest 5–10 minutes before serving. Add toppings if desired.
Notes
Use dairy-free alternatives for a DF version. For spice, add jalapeños or cayenne. Use pre-chopped frozen vegetables to save time. Meal preps well and reheats easily.
